Roasted Vegetables, best way to bring the wonderful food on the table with less effort

One of my favorite way to prepare veggies is to roast them. It doesn't take a lot of time and it's for sure less messy way to bring the wonderful food on the table with less effort. What is so good about roasted vegetables is that anyone can totally experiment with different veggies they are craving for. Sometimes, I crave for sweet vegetables like sweet potatoes and other times cruciferous veggies like broccoli and cauliflower. The fun part is that I can throw in any vegetable depends on my mood and the results are always spectacular. I always make a big batch and serve them with the variety of other dishes. They go nicely with any sort of proteins like steak,fish,burgers,tofu,tempeh etc. The pasta dish is another option that goes really well with roasted veggies.

Vegetables

For this particular recipe, I chopped all the vegetables (broccoli,cauliflower,potatoes,carrots,brussel sprouts) and tossed them in a bowl with olive oil mixture (olive oil, minced garlic,thyme, rosemary, salt, and pepper).Then, placed them in the foil tray but the best option is to use a baking tray that has very low curved sides to make them more crispy. 

I preheated oven at 425°F before I placed my veggies tray in an oven. Veggies took 30 to 35 mins to caramelized and crisp properly . Once it's time to take them out of the oven, I always check my veggies with the fork if they are nice and tender. If not, then I let them stay in an oven for extra 10 to 15 mins.

Roasted Vegetables


I served them with baked salmon marinated with lemon and dill along with brown rice cooked in vegetable broth.

When it comes to meal planning for the week, I usually prepare 2 to 3 dishes along with a generous amount of salads and fruits and this combo of roasted veggies,salmon, and brown rice is one of our favorites so far.

Quick tip: Don't use potatoes if planning to keep roasted vegetables more than 2 to 3 days.

INSTRUCTIONS:
1.Cut and chopped vegetables
2.Preheat the oven to 425 degrees F.
3.Combine olive oil, thyme,rosemary, minced garlic, olive oil, salt, and pepper together in a bowl.
4.Drizzle the olive oil mixture over the vegetables and mix well.
5.Lightly spray the baking tray with cooking spray and place all the vegetables evenly.
6.Roast vegetables for 30 to 45 mins and stir them every 20 mins.
7.Check with the fork if vegetables are ready.

Get good sleep!!



Sleep is vital when it comes to health and wellness that we always ignore and yet so abused in our society today. As we all know, it is recommended to sleep 7 to 9 hours but the most important thing we forget is the quality of our sleep. Personally, I used to get my 7 to 9 hours sleep but it was not deep in fact it was quite interrupted.


There are many factors that contribute to poor sleep like anxiety, stress, the air quality of the room,pain,strenuous physical activity and the list goes on. It is a very common problem with many of us and we don’t even pay attention to it. As a result, when we wake up we feel tired, sluggish and not so excited about our day. So what I did, I established my routine and rituals before I sleep. It really helped me to get my uninterrupted sleep and now I see a major difference in me due to this transition from poor sleep to deep sleep.

A good night sleep can really clear our mind so we can start our day without being overwhelmed and unenthusiastic. Besides, there are many other health concerns attached if someone is not getting enough sleep each night so make sure you sleep well. Take baby steps and find out what keeps you calm and relax before bed time. For me, 1o mins meditation, relaxing bath, or reading a good book totally work. It’s different for different people. Find ways to relax your body and mind for better sleep and achieve the best results.
