Roasted vegetables

5 to 6 persons

Ingredients

2 large head of broccoli, florets chopped off from the stalk

1 large head of cauliflower

5 to 6 whole organic carrots cut length wise

5 to 6 baby red potatoes

6 to 7 brussels sprouts

1/4 cup of olive oil 

2-3 tsp minced garlic

1/2 tsp thyme chopped

1/2 tsp rosemary

salt and black pepper according to taste

Directions

Cut and chopped all the vegetables

Preheat the oven to 425 degrees F.

Combine olive oil, thyme, rosemary, garlic, salt, and pepper together in a bowl.

pour the olive oil mixture over the vegetables and mix well.

Lightly spray the baking tray with cooking spray and place all the vegetables evenly.

Roast vegetables for 30 to 45 mins and stir them every 20 mins.

Check with the fork if vegetables are ready.
